Ah the summer. Nothing beats the smell of a freshly cut lawn, the feel of the sun on your skin and to top it all off, that kind of dozy feeling you get after filling your belly with a what was probably one too many cuts of sweet tea brisket washed down with a glass of your favorite red wine.
What was that? You have never tried a sweet tea infused brisket? Then there is no time to lose!
A sweet tea infused brisket is a brand new summer brisket recipe that is really taking the nation by storm. The brisket lays broiling in a deep pan of sweet tea long enough for it to fall off of your fork it is so tender. And the contrast of the sweet tea with the barbecued brisket and rub is just to die for.
So if you haven’t already tried it, I can’t emphasize enough how much you need to! Here is a list of all of the necessary ingredients so that you can get started straight away with your sweet tea infused barbecued brisket.
Ingredients:
For the brisket and rub
- 1 cup of brown sugar
- A mix of honey mustard, ground smoked paprika, onion powder, sea salt and a dash of freshly ground black pepper to make up one cup
- 13 lb brisket
- Extra virgin olive oil (as required)
For the sweet tea infusion
- 5 cups of sweetened lemon flavored tea
Directions:
Once you have got all of your ingredients together, it is time to get cracking with the all-important recipe. So tie your apron behind your back, grab a spatula, heat up the smoker and let’s get started!
To prepare the rub and cook the brisket.
- Preheat the smoker to 250 degrees.
- In a small mixing bowl, pour in the brown sugar, honey mustard, ground smoked paprika, onion powder, sea salt and freshly ground black pepper, stirring until all of the ingredients are combined. It should form a dry paste.
- Transfer the cut of brisket onto a meat preparation board and then trim away the excess fat and discard.
- Use a baster to baste the cut of brisket in extra virgin olive oil. Then use your hands to rub the spice mix onto the brisket, working it into all of the crevices.
- Place the brisket on to the smoker and smoke for a few hours or until a golden brown crust has formed over the meat.
To prepare the sweet tea infusion.
- Remove the brisket from the smoker and place into a deep ovenproof dish (make sure the dish more than covers the total height of the brisket).
- Pour the sweet tea into the ovenproof dish and broil for a few more hours or until the meat is tender.
- Remove the brisket from the ovenproof dish onto a chopping board and allow to stand for 20 minutes (this gives the meat a chance to reabsorb the flavors).
- Drain the leftover sweet tea juices from the ovenproof dish into a gravy boat and drizzle over the meat when serving.
Serve up some sides
